- Fresh parsley, for garnish
Instructions
- Sauté Aromatics: Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for about 5 minutes, stirring occasionally, until the onion becomes soft and translucent. Add the chopped garlic and cook for another minute until fragrant.
- Add Herbs and Spices: Stir in the chopped rosemary, thyme, and paprika. Cook for 30 seconds to allow the spices to release their aroma and flavor.
- Combine Beans and Tomatoes: Add the drained and rinsed cannellini beans, tomato paste, and crushed tomatoes to the pot. Mix well to combine all the ingredients evenly.
- Add Couscous and Stock: Pour in the pearl couscous followed by the vegetable stock. Stir everything together and bring the mixture to a gentle simmer.
- Simmer and Cook: Reduce the heat to low and let the mixture cook uncovered for about 15 minutes. Stir occasionally to prevent sticking. Cook until the couscous is tender and the liquid has mostly been absorbed.
