Description

This Tender Grilled Chicken Thighs Recipe features juicy, flavorful boneless skinless chicken thighs marinated in a creamy mixture of mayonnaise, oil, onions, garlic, and spices. The chicken is grilled to perfection, resulting in a tender and deliciously charred dish that’s perfect for a family dinner or a summer barbecue.

Ingredients

Chicken

  • 3 pounds boneless skinless chicken thighs, halved (or kept whole)

Marinade

  • 1/2 cup mayonnaise
  • 2 Tbsp oil (canola or olive oil)
  • 1 small onion, sliced
  • 3 garlic cloves, minced
  • 2 tsp salt, or to taste
  • 1/4 tsp ground pepper, or to taste
  • 1 tsp paprika
  • 1 fresh lime, juice divided

Instructions

  1. Prepare Chicken: Trim any extra fat from the chicken thighs and slice them in half if desired. Place the chicken thighs in a large mixing bowl.
  2. Make Marinade: In a separate bowl, combine the mayonnaise, oil, sliced onion, minced garlic, salt, pepper, and paprika, mixing well to create a smooth marinade.
  3. Coat Chicken: Pour the marinade over the chicken thighs in the large bowl and mix thoroughly until every piece is fully coated with the marinade.
  4. Marinate: Cover the bowl and refrigerate the chicken for at least 2 hours, or for best results, marinate overnight to allow flavors to develop deeply.
  5. Preheat Grill: Heat your grill to medium-high heat to prepare for cooking the chicken thighs.
  6. Grill Chicken: Place the marinated chicken thighs on the grill and cook for about 6-8 minutes per side, or until fully cooked and nicely charred on the outside.
  7. Finish and Serve: Remove the grilled chicken from the heat, drizzle with fresh lime juice, optionally garnish with cilantro, and serve hot.

Notes

  • For extra flavor, marinate the chicken overnight in the refrigerator.
  • You can keep the chicken thighs whole or halve them for quicker cooking.
  • Adjust salt and pepper according to your taste preference.
  • If grilling isn’t available, you can cook the chicken thighs under a broiler or in a grill pan on the stovetop.
  • Use fresh lime juice at the end for a bright, fresh finish.
