Ingredients

Potatoes

  • 2 pounds russet potatoes, peeled and small diced

  • 1 teaspoon onion powder

Ground Beef

  • 1 pound ground beef
  • 1 packet taco seasoning
  • Water (amount as per taco seasoning packet instructions)

  • 8 ounce bag Mexican shredded cheese
  • Optional toppings: pico de gallo, guacamole, sour cream


Instructions

  1. Prepare Potatoes: Peel and small dice 2 pounds of russet potatoes. Place the diced potatoes in a bowl and coat them evenly with 3-4 tablespoons of oil.
  2. Season Potatoes: Sprinkle 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder over the potatoes. Toss thoroughly to ensure all pieces are well coated with the seasonings and oil.
  3. Air Fry Potatoes: Preheat the air fryer to 400°F. Place the seasoned potatoes in the air fryer basket in an even layer. Cook for 18-20 minutes, shaking the basket 2-3 times during cooking to ensure potatoes crisp evenly.
  4. Cook Ground Beef: While potatoes cook, brown and crumble 1 pound of ground beef in a skillet over medium heat. Drain any excess grease. Add one packet of taco seasoning and the specified amount of water as directed on the seasoning packet. Simmer and cook following the packet instructions until the beef is fully seasoned and sauce slightly thickened. Remove from heat.
  5. Assemble Dish: In serving dishes or a casserole, layer the air-fried potatoes first, then top with the taco-seasoned ground beef. Sprinkle 8 ounces of Mexican shredded cheese over the top to melt slightly with the residual heat.
