Description

This Starbucks Roasted Tomato Mozzarella Panini copycat recipe delivers a deliciously melty and flavorful sandwich featuring roasted cherry tomatoes, fresh mozzarella, basil pesto, and spinach, all hugged by focaccia bread. Perfect for a comforting lunch or light dinner, it’s easy to prepare and bakes to golden perfection with a cheesy, savory finish.

Ingredients

Roasted Tomatoes

  • 1 pint cherry tomatoes
  • 1 tbsp olive oil
  • Salt & pepper, to taste

Sandwich

  • 4 focaccia bread pieces
  • 8 oz fresh mozzarella, sliced
  • 2/3 cup basil pesto
  • 1/2 cup chopped spinach

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to get it ready for roasting the tomatoes.
  2. Roast Tomatoes: Place the cherry tomatoes in a medium-sized baking dish. Drizzle with olive oil and season with salt and pepper to taste. Roast in the preheated oven for 20-25 minutes until the tomatoes are bursting and soft.
  3. Prepare the Bread: While tomatoes roast, slice each focaccia bread in half horizontally. Spread basil pesto evenly on both the top and bottom halves of each slice.
  4. Assemble Sandwich: On the bottom half of each bread, layer slices of fresh mozzarella. Then add a generous topping of the roasted cherry tomatoes, followed by chopped spinach. Finish by placing the top bread half over the fillings.
  5. Bake Panini: Place the assembled sandwiches on a baking sheet and bake in the oven for 5-10 minutes until the mozzarella melts and the bread is slightly toasted and warm.

Notes

  • You can substitute focaccia with ciabatta or a similar rustic bread if preferred.
  • For a crispier sandwich, consider pressing the panini in a grill pan for a few minutes after baking.
  • Use fresh basil pesto for best flavor, or store-bought pesto works fine.
  • Adjust the amount of spinach according to your taste or substitute with arugula for a peppery twist.
  • This sandwich is best served warm to enjoy the melty mozzarella.
