Ingredients
Roasted Tomatoes
- 1 pint cherry tomatoes
- 1 tbsp olive oil
- Salt & pepper, to taste
Sandwich
- 4 focaccia bread pieces
- 8 oz fresh mozzarella, sliced
- 2/3 cup basil pesto
- 1/2 cup chopped spinach
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to get it ready for roasting the tomatoes.
- Roast Tomatoes: Place the cherry tomatoes in a medium-sized baking dish. Drizzle with olive oil and season with salt and pepper to taste. Roast in the preheated oven for 20-25 minutes until the tomatoes are bursting and soft.
- Prepare the Bread: While tomatoes roast, slice each focaccia bread in half horizontally. Spread basil pesto evenly on both the top and bottom halves of each slice.
- Assemble Sandwich: On the bottom half of each bread, layer slices of fresh mozzarella. Then add a generous topping of the roasted cherry tomatoes, followed by chopped spinach. Finish by placing the top bread half over the fillings.
- Bake Panini: Place the assembled sandwiches on a baking sheet and bake in the oven for 5-10 minutes until the mozzarella melts and the bread is slightly toasted and warm.
Notes
- You can substitute focaccia with ciabatta or a similar rustic bread if preferred.
- For a crispier sandwich, consider pressing the panini in a grill pan for a few minutes after baking.
- Use fresh basil pesto for best flavor, or store-bought pesto works fine.
- Adjust the amount of spinach according to your taste or substitute with arugula for a peppery twist.
- This sandwich is best served warm to enjoy the melty mozzarella.
