Ingredients
Sauce Ingredients
- 1/2 cup low-sodium soy sauce
- 1/3 cup honey
- 1/3 cup ketchup
- 5 cloves garlic, minced
- 1 tsp grated fresh ginger (optional)
- 1-2 tsp rice vinegar or apple cider vinegar
Chicken
- 1.5 – 2 lbs boneless, skinless chicken thighs, patted dry
Thickening Slurry
- 2 tbsp cornstarch
- 2 tbsp cold water
Optional Garnishes
- Toasted sesame seeds
- Sliced green onions
- Cooked rice, for serving
Instructions
- Prep & Dry: Gather all your ingredients and spray a 6-quart slow cooker with cooking spray to prevent sticking.
- Whisk the Sauce: In the slow cooker, combine the soy sauce, honey, ketchup, minced garlic, grated ginger, and vinegar. Whisk these together until the sauce is smooth and well combined.
- Assemble: Pat the chicken thighs dry with paper towels to help the sauce adhere better. Place the chicken pieces into the slow cooker bowl and turn them in the sauce to fully coat each piece.
- Slow Cook: Cover the slow cooker and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. The chicken is done when it reaches an internal temperature of 165°F. Cooking on LOW is recommended for the most tender results.
- The Thickening Slurry: Once cooked, remove the chicken to a plate and cover with foil to keep warm. In a small bowl, whisk together the cornstarch and cold water to create a slurry. Stir this slurry into the sauce remaining in the slow cooker.
- Thicken Sauce: Turn the slow cooker to HIGH, leave uncovered, and cook for 5-15 minutes, stirring occasionally, until the sauce becomes thick and glossy.
- Shred: Shred the chicken into chunky pieces rather than fine strands for a better texture, then return the chicken to the thickened sauce and let it heat through for about 5 minutes.
- Serve: Serve the honey garlic chicken over cooked rice and garnish with toasted sesame seeds and sliced green onions if desired.
Notes
- Using low-sodium soy sauce is important to avoid an overly salty sauce.
- Patting the chicken dry before adding to the sauce helps the flavors stick better.
- Cooking on LOW yields more tender chicken thighs compared to HIGH.
- The ginger is optional but adds great depth and warmth to the flavor.
- For a thicker sauce, let the slurry cook uncovered a bit longer until reaching your desired consistency.
- Shredding chicken into chunky pieces improves the eating experience rather than fine shreds.
