Ingredients

Chicken

  • 2 large boneless skinless chicken breasts
  • Salt & pepper (to taste)
  • 1/2 teaspoon garlic powder
  • 2 tablespoons cornstarch

For Cooking

  • 1 tablespoon olive oil (plus more as needed)
  • 4 tablespoons butter (divided)
  • 4 cloves garlic (minced)
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Prepare the chicken: Cut the chicken breasts into bite-sized pieces. Place them in a bowl and season with salt, pepper, and garlic powder. Sprinkle the cornstarch over the chicken and toss well until all pieces are evenly coated.
  2. Heat the skillet and add fats: Place a skillet over medium-high heat and add the olive oil along with 1 tablespoon of butter. Allow the skillet to get hot and the butter to melt.
  3. Cook the chicken – first batch: Add half of the chicken pieces to the hot skillet, making sure they are not crowded so they brown properly. Cook for about 4 minutes, then flip each piece and cook for an additional 3-4 minutes until the chicken is golden brown and cooked through to an internal temperature of 165°F.
  4. Cook the chicken – second batch: If the skillet looks dry, add up to an additional 1 tablespoon of olive oil. Add the remaining chicken pieces and cook as before until browned and fully cooked. Transfer all cooked chicken pieces to a plate.
  5. Make the garlic butter sauce: Remove the skillet from the heat and allow it to cool for one minute. Then add the remaining butter and minced garlic to the skillet. Return to medium heat and cook while stirring constantly for 1-2 minutes until the garlic is fragrant and cooked but not burnt.
  6. Toss chicken in sauce and serve: Add the cooked chicken back into the skillet with the garlic butter sauce. Toss thoroughly to coat all pieces. Garnish with chopped fresh parsley and serve immediately.

  • To ensure even browning, do not overcrowd the pan. Cook chicken in batches if necessary.
