Description

This Easy Shrimp Burrito Bowls recipe offers a flavorful and quick meal featuring seasoned sautéed shrimp served over cilantro lime rice, topped with fresh avocado, black beans, corn, cheese, sour cream, and a squeeze of lime. Perfect for a satisfying weeknight dinner or meal prep.

Ingredients

Shrimp and Seasoning

  • 1 lb shrimp (de-veined and peeled)
  • 2 tbsp chili powder
  • 2 tsp salt
  • 2 tsp black pepper
  • 3 tsp cumin
  • 3 tsp garlic powder

Rice and Toppings

  • 4 cups Cilantro Lime Rice (cooked)
  • 4 tbsp olive oil
  • 1 cup corn (drained and rinsed if using canned)
  • 1 cup black beans (drained and rinsed if using canned)
  • 2 avocados (sliced)
  • 2 limes (juiced)
  • 4 tbsp sour cream
  • 4 tbsp cilantro (chopped)
  • 1 cup cheese (shredded, pick your favorite cheese)

Instructions

  1. Season the Shrimp: In a bowl, combine the shrimp with chili powder, salt, black pepper, cumin, and garlic powder. Toss well to ensure the shrimp are evenly coated with the spices.
  2. Heat the Olive Oil: Warm 4 tablespoons of olive oil in a large skillet over medium heat to prepare for cooking the shrimp.
  3. Cook the Shrimp: Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on one side until they start to turn pink. Flip the shrimp and cook for another 2-3 minutes until fully cooked and opaque.
  4. Prepare the Rice: Heat the cilantro lime rice according to package instructions or use a homemade version, then divide the rice evenly into 4 serving bowls.
  5. Prepare the Toppings: Slice the avocados, shred the cheese, chop the cilantro, and drain and rinse the corn and black beans if canned to have all toppings ready.
  6. Assemble the Burrito Bowls: Top each bowl of rice with cooked shrimp, corn, black beans, sliced avocado, a dollop of sour cream, shredded cheese if desired, and garnish with chopped cilantro and fresh squeezed lime juice. Serve immediately and enjoy!

Notes

  • Use fresh shrimp for best flavor, but frozen, thawed shrimp work well too.
  • Adjust spice levels by reducing or increasing chili powder according to your heat preference.
  • Cilantro lime rice can be made ahead and reheated or store-bought rice can be used for convenience.
  • For a healthier twist, substitute sour cream with Greek yogurt.
  • If avoiding dairy, omit the cheese and sour cream or use dairy-free alternatives.
