- 4 tbsp olive oil
- 1 cup corn (drained and rinsed if using canned)
- 1 cup black beans (drained and rinsed if using canned)
- 2 avocados (sliced)
- 2 limes (juiced)
- 4 tbsp sour cream
- 4 tbsp cilantro (chopped)
- 1 cup cheese (shredded, pick your favorite cheese)
Instructions
- Season the Shrimp: In a bowl, combine the shrimp with chili powder, salt, black pepper, cumin, and garlic powder. Toss well to ensure the shrimp are evenly coated with the spices.
- Heat the Olive Oil: Warm 4 tablespoons of olive oil in a large skillet over medium heat to prepare for cooking the shrimp.
- Cook the Shrimp: Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on one side until they start to turn pink. Flip the shrimp and cook for another 2-3 minutes until fully cooked and opaque.
- Prepare the Rice: Heat the cilantro lime rice according to package instructions or use a homemade version, then divide the rice evenly into 4 serving bowls.
- Prepare the Toppings: Slice the avocados, shred the cheese, chop the cilantro, and drain and rinse the corn and black beans if canned to have all toppings ready.
