Description

This Crockpot Chicken Breast recipe is an easy, hands-off meal perfect for busy days. Tender boneless, skinless chicken breasts are seasoned with a flavorful blend of spices, rubbed with olive oil, and slow-cooked in low-sodium chicken broth to keep them moist and juicy. Ideal for meal prep or a simple dinner, this dish requires minimal ingredients and prep time with maximum delicious results.

Ingredients

Chicken and Broth

  • ½ cup low-sodium chicken broth
  • 4 boneless, skinless chicken breasts

Seasonings and Oil

  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp ground paprika
  • ¼ tsp ground black pepper
  • ¼ tsp garlic powder

Instructions

  1. Add broth to slow cooker. Pour ½ cup of low-sodium chicken broth into the bottom of the slow cooker to help keep the chicken moist during cooking.
  2. Prepare seasoning mix. In a small dish, combine 1 tsp kosher salt, ½ tsp onion powder, ½ tsp dried thyme, ½ tsp ground paprika, ¼ tsp ground black pepper, and ¼ tsp garlic powder until well mixed.
  3. Season the chicken. Rub 2 tablespoons of olive oil over the chicken breasts, then evenly coat them with the prepared seasoning mix, ensuring all sides are covered.
  4. Place chicken in slow cooker. Arrange the seasoned chicken breasts in a single layer inside the slow cooker over the chicken broth.
  5. Cook the chicken. Cover and cook on high for 3 to 4 hours or on low for 4 to 6 hours, until the chicken reaches an internal temperature of 165°F (74°C) and is tender.

Notes

  • Use a meat thermometer to ensure chicken is cooked safely to 165°F (74°C).
  • For extra flavor, you can add vegetables like carrots or potatoes to the slow cooker.
  • Leftover chicken can be shredded and used in salads, sandwiches, or wraps.
  • Adjust seasonings to taste, adding more paprika or herbs if desired.
  • Cooking times may vary depending on slow cooker brand and size.
