- Prepare the Potatoes: Peel and dice the russet potatoes into small cubes. Coat the diced potatoes thoroughly with 3-4 tablespoons of oil, then season evenly with 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder, ensuring every piece is well-coated.
- Air Fry the Potatoes: Place the seasoned potatoes in the air fryer basket. Cook at 400°F for 18-20 minutes, shaking the basket 2-3 times during cooking to promote even crisping and browning.
- Cook the Ground Beef: While the potatoes cook, brown and crumble 1 pound of ground beef in a skillet over medium heat. Drain any excess grease, then add 1 packet of taco seasoning along with the amount of water specified on the seasoning packet. Stir to combine and cook according to the seasoning packet instructions, then remove from heat.
- Assemble the Dish: To serve, layer the air-fried seasoned potatoes on a plate or serving dish. Spoon the seasoned ground beef over the potatoes, then sprinkle evenly with the shredded Mexican cheese. Add optional toppings such as pico de gallo, guacamole, and sour cream as desired.
