Filling
- 1 cup Medjool dates (about 13 dates), pitted and soaked
- 1/3 cup sunflower seed butter

Chocolate Coating
- 1/2 cup dark chocolate
- 1/2 tsp coconut oil
Instructions
- Soften Dates: Remove the pits from your dates and soak them in hot water for 5 minutes to soften, making them easier to blend and giving the filling a chewier texture.
- Blend Filling Base: Drain the water from the dates, then place them in your food processor with the sunflower seed butter and vanilla bean paste. Blend until the mixture becomes a thick, sticky caramel-like consistency.
- Add Remaining Ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the blended mixture. Blend again until fully combined, stopping to scrape down the sides as needed to ensure even blending.
- Form Bites: Scoop the dough and roll it into balls, each about one tablespoon in size, working quickly to maintain shape.
- Chill Bites: Place the balls on a lined baking sheet and freeze for at least 30 minutes to firm up, making them easier to dip.
- Melt Chocolate: In a small microwavable dish, combine the dark chocolate and coconut oil. Melt on high in 20-30 second intervals, stirring between each until smooth and fully melted.
- Dip Bites in Chocolate: Remove the chilled balls from the freezer and dip each one individually into the melted chocolate, then place back on the lined baking sheet to set. Refrigerate if needed until the chocolate hardens.
