Description

Soft, hearty, and slightly sweet, this whole wheat oatmeal bread is the perfect homemade loaf for sandwiches, toast, or simply slathered with butter and honey.


Ingredients

  • 2¼ teaspoons dry active yeast (or instant yeast)
  • 1 tablespoon granulated sugar
  • ½ cup warm water (110°F)
  • 1 cup whole milk (110°F)
  • 4 tablespoons unsalted butter, melted
  • ¼ cup light brown sugar
  • ¼ cup honey
  • 1 cup old-fashioned oats
  • 1¾ cups whole wheat flour
  • 1 teaspoon fine sea salt
  • to cups bread flour (or all-purpose flour)
  • Optional: extra oats for topping

Instructions

  1. In a large bowl or stand mixer, stir together the yeast, sugar, and warm water. Let sit for 5 minutes until foamy.
  2. Add warm milk, melted butter, brown sugar, honey, and oats. Stir until well combined.
  3. Add whole wheat flour and salt. Mix until combined, scraping the bowl as needed.
  4. Gradually add bread flour, ⅓ cup at a time, mixing until a dough forms and pulls away from the sides.
  5. Increase speed to medium-high and knead for 8 minutes.
  6. Lightly oil a large bowl, transfer dough to it, cover, and let rise in a warm place for 2 hours or until doubled in size.
  7. Grease and line two 8.5×4.5″ or 9×5″ loaf pans with parchment.
  8. Divide dough in half. Flatten each piece into an 8×12″ rectangle, pressing out air bubbles.
  9. Roll from the short end and pinch seams to seal. Place in prepared pans, seam-side down.
  10. Optionally sprinkle each loaf with oats. Cover and let rise 45 minutes to 1 hour until doubled.
  11. Preheat oven to 375°F about 10 minutes before baking.
  12. Bake for 25–30 minutes, tenting with foil if browning too quickly, until internal temperature reaches 210°F.
  13. Cool loaves at least 20 minutes before slicing. Serve with butter, jam, or make a sandwich!

Notes

  • Use instant yeast to skip the proofing step if desired.
  • Honey and brown sugar add moisture and flavor; you can adjust the sweetness to taste.
  • Store cooled loaves in an airtight container at room temperature for up to 4 days or freeze for longer storage.
