Description

Ingredients

  • 1 cup cherry tomatoes
  • 1/4 cup olive oil (divided)
  • 1 teaspoon salt (to taste)

  • 2 (15.5 oz) cans cannellini beans, drained and rinsed
  • Juice of 1/2 lemon
  • 12 cloves garlic (see notes)
  • 2 tablespoons fresh parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C).
  2. Roast the Tomatoes: Arrange the cherry tomatoes in an oven-safe dish. Drizzle with 2 tablespoons of olive oil, and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Toss to coat the tomatoes. Roast in the oven for 25-30 minutes, or until the tomatoes begin to burst.
  3. Prepare the Dip: Drain and rinse the cannellini beans until the water runs clear. Place the beans in a food processor, then add the remaining 2 tablespoons of olive oil, garlic, lemon juice, salt, pepper, parsley, thyme, and oregano. Pulse until the mixture is thick and smooth.
  4. Assemble the Dip: Scoop the white bean dip into a wide-rimmed bowl, spreading it across the bottom.
  5. Top with Tomatoes: Spoon the roasted tomatoes on top of the dip. Garnish with extra olive oil and a sprinkle of fresh parsley.
  6. Serve: Serve with crostini or your favorite dippers (e.g., crackers, veggies, pita chips).
