Ingredients

- 1 cup cherry tomatoes
- 1/4 cup olive oil (divided)
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (to taste)
- 2 (15.5 oz) cans cannellini beans, drained and rinsed
- Juice of 1/2 lemon
- 1–2 cloves garlic (see notes)
- 2 tablespoons fresh parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C).
- Roast the Tomatoes: Arrange the cherry tomatoes in an oven-safe dish. Drizzle with 2 tablespoons of olive oil, and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Toss to coat the tomatoes. Roast in the oven for 25-30 minutes, or until the tomatoes begin to burst.
- Prepare the Dip: Drain and rinse the cannellini beans until the water runs clear. Place the beans in a food processor, then add the remaining 2 tablespoons of olive oil, garlic, lemon juice, salt, pepper, parsley, thyme, and oregano. Pulse until the mixture is thick and smooth.
- Assemble the Dip: Scoop the white bean dip into a wide-rimmed bowl, spreading it across the bottom.
- Top with Tomatoes: Spoon the roasted tomatoes on top of the dip. Garnish with extra olive oil and a sprinkle of fresh parsley.
- Serve: Serve with crostini or your favorite dippers (e.g., crackers, veggies, pita chips).

- Spicy Kick: Add red pepper flakes or a small diced jalapeño to the dip for some heat.
- Cheesy Option: Stir in some grated Parmesan cheese into the dip for added richness.
