Description

A light and airy Water Cake made with simple ingredients like self-rising flour, unrefined sugar, sparkling water, olive oil, and vanilla. This easy-to-make cake is baked to a golden perfection and can be served plain or with a variety of frostings, making it a versatile, delightful treat for any occasion.

Ingredients

Dry Ingredients

  • 1 1/2 cups Self-Rising Flour
  • 1 cup Unrefined Sugar

Wet Ingredients

  • 1 cup Sparkling Water
  • 1/3 cup Mild-Flavor Olive Oil
  • 1 tablespoon Vanilla Extract

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350°F (180°C). Line a 6-inch or 8-inch round or square pan with parchment paper. Lightly oil the bottom and sides of the pan using cooking oil spray to prevent sticking. Set aside.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the self-rising flour and unrefined sugar until well combined. This ensures an even distribution of ingredients for a balanced texture.
  3. Add wet ingredients: Gently fold in the sparkling water, mild-flavor olive oil, and vanilla extract into the dry mixture. Whisk just enough to achieve a smooth, lump-free batter without overmixing to maintain the cake’s lightness.
  4. Bake the cake: Pour the batter evenly into the prepared pan. Place the pan on the center rack of the preheated oven. For a 6-inch pan, bake for 50 to 60 minutes; for an 8-inch pan, bake 35 to 40 minutes. The cake is done when the top is golden brown and a toothpick inserted in the center comes out clean.
  5. Cool the cake: Allow the cake to cool in the pan for 10 minutes to set. Then transfer it to a cooling rack and let it cool completely for about 2 hours before slicing. This prevents the cake from crumbling when cut.
  6. Serve: Enjoy the cake plain or enhance its flavor by frosting it with a coconut frosting or a dairy-free vanilla frosting as preferred.

Notes

  • Use self-rising flour for the right texture and rise; if unavailable, combine all-purpose flour with baking powder and a pinch of salt.
  • Unrefined sugar adds a subtle molasses flavor but can be substituted with white granulated sugar if desired.
  • Sparkling water helps create a light and airy texture in the cake batter.
  • Choose a mild-flavor olive oil to avoid overpowering the cake’s subtle flavors.
  • Ensure the cake is completely cool before frosting to prevent melting.
