Ingredients
- 1 package of cornbread mix [15oz]
- ½ cup vegan butter, melted [112g]
- 1 cup non-dairy milk [240ml]
- 1 cup vegan sour cream [8 oz]
- 1 tbsp sugar (optional)
- 1 ½ cups frozen corn [12oz]
- ½ cup vegan cheese [56g]
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine the cornbread mix, melted vegan butter, non-dairy milk, vegan sour cream, sugar (if using), frozen corn, and most of the vegan cheese. Mix until well combined.
- Pour the batter into a 9×9 inch baking dish and smooth out the top.
- Sprinkle the remaining vegan cheese on top.
- Bake for 45 minutes to 1 hour, or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow the casserole to cool for 10 minutes before serving.
Notes
- You can add diced jalapeños or green chiles for a spicy kick.
