Vegan Chocolate Peanut Butter Bars are a delicious no-bake treat that taste just like a peanut butter cup. Made with only 5 ingredients, they come together in 10 minutes and are perfect for a sweet snack or dessert.
Ingredients
- 1 cup vegan butter, melted
- 1 cup creamy peanut butter
- 1 1/2 cups cookie crumbs (graham crackers or similar cookies)
- 2 cups powdered sugar
- 12 ounces dairy-free chocolate chips (1 bag)
- 1/4 cup creamy peanut butter
Instructions
- Line a 9×13 inch pan with parchment paper, leaving overhang for easy removal.
- In a large mixing bowl, combine melted vegan butter and 1 cup peanut butter. Mix until smooth.
- Add powdered sugar and stir to combine.
- Mix in half of the cookie crumbs, then the remaining half until fully incorporated. The mixture will be thick; use hands if necessary.
- Press the peanut butter mixture evenly into the prepared pan. Set aside.
- In a small pot over low-medium heat, melt the chocolate chips with 1/4 cup peanut butter, stirring frequently until smooth.
- Pour the melted chocolate mixture over the peanut butter layer and spread evenly.
- Chill in the refrigerator for 1 1/2 to 2 hours, or until firm.
- To slice, run a sharp knife under hot water, wipe clean, then cut. Alternatively, let bars sit at room temperature for 10 minutes before cutting.
Notes
- Use parchment paper with overhang to easily lift the bars from the pan.
- Bars can be stored in the refrigerator for up to 1 week or frozen for longer storage.
- To avoid cracking the chocolate topping, use a warm knife or allow bars to soften slightly before slicing.
