Description

This Tuscan Tortellini is a creamy, comforting dish featuring cheese-filled tortellini, sun-dried tomatoes, fresh spinach, and a rich garlic cream sauce. Quick and easy to prepare, it’s perfect for family dinners or special gatherings.

Ingredients

  • 1 pound cheese tortellini (fresh or frozen)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, julienned
  • ½ cup chicken or vegetable broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cups fresh spinach, roughly chopped
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.
  2. Sauté the Garlic and Sun-Dried Tomatoes: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant. Add the sun-dried tomatoes and cook for 2-3 more minutes, stirring occasionally.
  3. Make the Cream Sauce: Pour in chicken or vegetable broth and let it simmer for about 3 minutes. Reduce the heat to low, then stir in the heavy cream. Let it cook for 5 minutes, stirring frequently, until the sauce thickens.
  4. Add Spinach and Parmesan: Stir in grated Parmesan cheese and chopped spinach. Cook for 2-3 minutes, until the spinach wilts and the cheese melts. Season with salt and black pepper to taste.
  5. Combine and Serve: Add the cooked tortellini to the skillet and toss to coat in the creamy sauce. Cook for an additional 2-3 minutes to ensure everything is heated through. Serve hot, garnished with fresh basil or parsley if desired.

Notes

  • You can substitute vegetable broth for chicken broth for a vegetarian-friendly option.
  • For extra creaminess, add a bit more heavy cream or Parmesan cheese.
  • If you prefer a spicier dish, add a pinch of red pepper flakes to the sauce.
