Description
This Turkey and Veggie Skillet is a wholesome and flavorful one-pan meal perfect for quick dinners or meal prep. Combining lean ground turkey with fresh vegetables like zucchini and broccoli, simmered in fire-roasted tomatoes and seasoned with oregano and basil, this dish is topped with melted Colby jack or cheddar cheese and garnished with fresh cilantro and lime wedges for a zesty finish.
Ingredients
Meat and Dairy
- 1 lb lean ground turkey, chicken, or beef
- 1/2 cup Colby jack or cheddar cheese, shredded, divided
Vegetables
- 1 large onion, diced
- 3 cloves of fresh garlic, minced
- 2 medium zucchini, diced
- 2 cups broccoli florets
- 1 x 14.5 oz can fire-roasted tomatoes
Oils and Seasonings
- 2 Tbsps avocado oil or olive oil, divided
- Sea salt and ground pepper, to taste
- 2 tsps dried oregano
- 1 tsp dried basil
Garnish
- Cilantro, fresh
- Lime wedges
Instructions
- Sauté onions and garlic: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the diced onion and sauté for 2 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Cook the ground turkey: Stir in the ground turkey into the skillet, breaking it up with a wooden spoon as it cooks. Continue cooking until the meat is nicely golden brown. Once cooked, remove the turkey from the skillet and set aside on a plate.
- Cook the vegetables: In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the diced zucchini and broccoli florets, cooking for about 4 minutes until they are tender-crisp.
- Combine meat, tomatoes, and seasoning: Return the cooked ground turkey to the skillet with the vegetables. Stir in the fire-roasted tomatoes, dried oregano, dried basil, salt, and pepper to taste. Add half of the shredded cheese. Reduce heat to medium and simmer for approximately 10 minutes, or until most of the liquid has reduced.
- Add cheese and garnish: Sprinkle the remaining shredded cheese on top of the skillet mixture and allow it to melt for a few minutes. Garnish with fresh cilantro leaves and serve with lime wedges on the side for squeezing over the dish. Enjoy!
