Description

A fresh twist on the classic tuna salad, spiced with curry powder and sweetened with honey or mango chutney, all wrapped in a flour tortilla with crisp veggies. A perfect, quick, and satisfying meal for lunchboxes or a speedy lunch!


Ingredients

  • For the Tuna Salad:
  • 2 cans (7 oz/198 g) oil-packed tuna, drained
  • ⅓ cup (75 ml) mayonnaise
  • ¼ cup (40 g) finely diced red onion
  • ¼ cup (35 g) finely diced celery
  • 1 tbsp finely diced sweet pickles
  • ½ tsp curry powder
  • 4 tsp (20 ml) honey or mango chutney
  • For the Wraps:
  • 4 flour tortillas, 10 inches (25 cm) in diameter
  • 2 cups (50 g) Boston lettuce leaves

Instructions

  1. In a bowl, mix the drained tuna with mayonnaise, red onion, celery, pickles, and curry powder. Season with pepper to taste.
  2. Spread the honey or mango chutney on one half of each tortilla.
  3. Cover with lettuce leaves, then spread the tuna salad over the lettuce.
  4. Fold the ends of the tortilla towards the center and roll tightly to form a wrap.
  5. Wrap each tortilla in parchment paper, twisting the ends to seal. Cut the wraps in half.
  6. Serve immediately, or wrap in plastic wrap and refrigerate until ready to serve.

Notes

  • For an extra crunch, try adding chopped cucumbers or bell peppers.
  • You can swap the mayonnaise with Greek yogurt for a lighter version.
  • If using mango chutney, adjust the sweetness level to your liking.
