Description

Grilled jumbo shrimp marinated in a flavorful mixture of olive oil, lemon, garlic, and spices, perfect for a light yet satisfying meal.

Ingredients

  • Shrimp:
  • 1 ½ pounds jumbo shrimp (16/20, peeled and deveined, tails on)
  • Marinade:
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper (optional)
  • For Garnish:
  • Lemon wedges

Instructions

  1. Prepare the Shrimp: Peel and devein the shrimp if needed, leaving the tails on.
  2. Make the Marinade: In a medium bowl, combine olive oil, lemon juice, parsley, garlic, oregano, paprika, salt, black pepper, and crushed red pepper (optional). Stir until the marinade is well mixed.
  3. Marinate the Shrimp: Add the shrimp to the marinade bowl and toss until fully coated. Cover and refrigerate for at least 15 minutes, up to 1 hour for more flavor.
  4. Prep the Skewers: If using wooden skewers, soak them in water for at least 1 hour before grilling.
  5. Grill the Shrimp: Preheat the grill to medium-high heat. Thread 4-6 shrimp per skewer.
  6. Cook the Shrimp: Grill the shrimp skewers for 2-3 minutes per side, or until opaque and cooked through.
  7. Garnish and Serve: Garnish with fresh chopped parsley and lemon wedges. Serve immediately.

Notes

  • For extra flavor: You can brush the shrimp with more marinade during grilling.
  • Serving Suggestions: Pair with a side of rice, grilled vegetables, or a fresh salad.
