Ingredients
- Shrimp:
- 1 ½ pounds jumbo shrimp (16/20, peeled and deveined, tails on)
- Marinade:
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon crushed red pepper (optional)
- For Garnish:
- Lemon wedges
Instructions
- Prepare the Shrimp: Peel and devein the shrimp if needed, leaving the tails on.
- Make the Marinade: In a medium bowl, combine olive oil, lemon juice, parsley, garlic, oregano, paprika, salt, black pepper, and crushed red pepper (optional). Stir until the marinade is well mixed.
- Marinate the Shrimp: Add the shrimp to the marinade bowl and toss until fully coated. Cover and refrigerate for at least 15 minutes, up to 1 hour for more flavor.
- Prep the Skewers: If using wooden skewers, soak them in water for at least 1 hour before grilling.
- Grill the Shrimp: Preheat the grill to medium-high heat. Thread 4-6 shrimp per skewer.
- Cook the Shrimp: Grill the shrimp skewers for 2-3 minutes per side, or until opaque and cooked through.
- Garnish and Serve: Garnish with fresh chopped parsley and lemon wedges. Serve immediately.
