Ingredients

Teriyaki Sauce

  • 1/2 cup Low-Sodium Soy Sauce
  • 1/4 cup Water
  • 2 tablespoons Red Vinegar
  • 2 tablespoons Brown sugar (or less as desired)
  • 2 tablespoons Granulated sugar (or less as desired)
  • 2 teaspoons Minced garlic
  • 1 teaspoon Ground ginger
  • 1 tablespoon Cornstarch
  • 2 tablespoons Warm water

Ground Turkey and Vegetables

  • 1 tablespoon Vegetable oil
  • 1/2 cup Diced onion
  • 2 tablespoons Minced garlic
  • 1 pound Ground Turkey
  • 1 cup Broccoli, finely chopped
  • 2 Large carrots, peeled and grated
  • 2 Green onions, diced for garnish
  • 4 cups Cooked white or brown rice


Instructions

  1. Prepare Teriyaki Sauce: In a small bowl, whisk together the cornstarch and warm water until the cornstarch dissolves fully. Set this slurry aside. In a small saucepan over medium heat, combine soy sauce, water, red vinegar, brown sugar, granulated sugar, minced garlic, and ground ginger. Whisk gently until the sugars dissolve. Slowly add the cornstarch mixture while whisking continuously and simmer until the sauce thickens. Remove from heat and set aside.
  2. Cook Onions and Garlic: Heat vegetable oil in a large skillet over medium-high heat. Add diced onions and stir frequently until they become soft and translucent. If onions start to scorch, reduce the heat immediately. Next, stir in minced garlic and cook briefly until fragrant.
  3. Cook Ground Turkey and Vegetables: Add ground turkey to the skillet and break it apart with a spatula. Cook for 4-5 minutes, stirring occasionally, until the turkey is halfway cooked. Then add grated carrots and finely chopped broccoli. Continue cooking, stirring occasionally, until the turkey is fully cooked through and vegetables soften, about 5-6 minutes.
  4. Combine with Teriyaki Sauce: Pour the prepared teriyaki sauce over the turkey and vegetable mixture. Stir well to coat everything evenly. Simmer on medium heat for about 5 minutes to meld the flavors together.
  5. Assemble Bowls and Serve: Divide cooked rice evenly into four bowls. Top each with a generous portion of the teriyaki turkey and vegetable mixture. Garnish with diced green onions and serve immediately for a warm, satisfying meal.
