Description

This Teriyaki Chicken Casserole combines tender chicken, colorful vegetables, and melted mozzarella cheese, all baked together in a flavorful teriyaki sauce. A perfect hearty meal that’s easy to prepare and packed with savory goodness, this casserole is great for family dinners or meal prepping!


Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 2 cups cooked rice
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped (any color)
  • 1 cup broccoli florets, steamed
  • 1 cup frozen peas, thawed
  • ½ cup teriyaki sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ¼ cup soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with olive oil.
  2. In a large mixing bowl, combine the cooked chicken, cooked rice, sliced carrots, chopped bell peppers, steamed broccoli, and thawed peas.
  3. Add the teriyaki sauce, soy sauce, garlic powder, and onion powder to the bowl. Stir until all the ingredients are evenly coated in the sauce.
  4. Transfer the mixture into the prepared baking dish and spread it out evenly.
  5. Sprinkle the shredded mozzarella cheese on top of the casserole.
  6. Cover the dish with aluminum foil and bake for 25-30 minutes, until the vegetables are tender and the cheese is melted and bubbly.
  7. Remove the foil and bake for an additional 5 minutes, or until the top is golden and crispy.
  8. Let the casserole cool for a few minutes before serving.

  • You can add extra vegetables like zucchini or snap peas for more color and flavor.
  • For a gluten-free version, use a gluten-free soy sauce or tamari.
