Description
A fun and easy weeknight dinner, Taco Spaghetti combines seasoned ground beef, spaghetti, taco seasoning, and gooey cheese for a flavorful, kid-friendly meal.
Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef
- 1/4 cup yellow onions, chopped
- 1/4 cup taco seasoning (1 packet)
- 10 ounces Rotel tomatoes (with juice)
- 8 ounces spaghetti noodles, uncooked
- 3 cups water
- 4 ounces cheddar cheese, shredded
- 1/2 cup cilantro, chopped
Instructions
- Heat olive oil in a 12-inch skillet over medium heat.
- Brown the ground beef and onion in the skillet until the meat is no longer pink and the onions are soft and translucent.
- Add the taco seasoning, Rotel tomatoes (with juice), spaghetti noodles, and water to the skillet.
- Bring the mixture to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes, or until the pasta is cooked and most of the liquid is absorbed.
- Remove from heat. Sprinkle half of the shredded cheddar cheese into the pan and stir to distribute the cheese and pasta evenly.
- Top with the remaining cheese and chopped cilantro. Serve hot.
Notes
- For added heat, you can use spicy Rotel tomatoes or add a pinch of red pepper flakes.
- Feel free to top with sour cream or sliced jalapeños for extra flavor.
