Description

A fun and easy weeknight dinner, Taco Spaghetti combines seasoned ground beef, spaghetti, taco seasoning, and gooey cheese for a flavorful, kid-friendly meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1/4 cup yellow onions, chopped
  • 1/4 cup taco seasoning (1 packet)
  • 10 ounces Rotel tomatoes (with juice)
  • 8 ounces spaghetti noodles, uncooked
  • 3 cups water
  • 4 ounces cheddar cheese, shredded
  • 1/2 cup cilantro, chopped

Instructions

  1. Heat olive oil in a 12-inch skillet over medium heat.
  2. Brown the ground beef and onion in the skillet until the meat is no longer pink and the onions are soft and translucent.
  3. Add the taco seasoning, Rotel tomatoes (with juice), spaghetti noodles, and water to the skillet.
  4. Bring the mixture to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes, or until the pasta is cooked and most of the liquid is absorbed.
  5. Remove from heat. Sprinkle half of the shredded cheddar cheese into the pan and stir to distribute the cheese and pasta evenly.
  6. Top with the remaining cheese and chopped cilantro. Serve hot.

Notes

  • For added heat, you can use spicy Rotel tomatoes or add a pinch of red pepper flakes.
  • Feel free to top with sour cream or sliced jalapeños for extra flavor.
