Description
A lighter twist on classic tacos, these Taco Lettuce Wraps are made with seasoned beef, black beans, and green chiles, all served in crisp romaine leaves. Topped with fresh tomatoes, avocado, and lime juice, they’re a flavorful and wholesome meal perfect for busy weeknights.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 2 cloves garlic, minced
- 1 1/2 lbs ground beef
- 2 tablespoons taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (4 oz) can diced green chiles
- 3 romaine hearts, washed
- Diced tomatoes (for topping)
- Avocados, diced (for topping)
- Sliced green onions (for topping)
- Fresh cilantro (for topping)
- Lime slices (for serving)
- Shredded cheese (optional, for serving)
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, cooking until softened, about 3–4 minutes.
- Stir in garlic and cook for 1 more minute.
- Add ground beef, breaking it apart as it cooks. Continue to cook until fully browned.
- Stir in taco seasoning and cook for another 1–2 minutes.
- Add black beans and diced green chiles. Stir well and cook until heated through. Remove from heat.
- Cut the bottom 2 inches off the romaine hearts and gently separate the leaves.
- Spoon the beef mixture into each lettuce cup.
- Top with diced tomatoes, avocado, green onions, cilantro, lime slices, and cheese if using.
