Description

Delicious, comforting sweet potato pie bars with a buttery graham cracker crust, spiced filling, and optional toppings like whipped cream, marshmallow fluff, or chopped pecans. A perfect fall dessert!


Ingredients

  • For the Crust:
  • 1 ½ cups graham cracker crumbs (or crushed vanilla wafers)
  • ½ cup melted butter
  • ¼ cup brown sugar
  • For the Filling:
  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • ½ cup brown sugar
  • 2 eggs
  • ½ cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • For the Topping (Optional):
  • Whipped cream or marshmallow fluff
  • Chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Make the Crust: In a bowl, mix graham cracker crumbs, melted butter, and brown sugar. Press the mixture into the bottom of the pan and bake for 10 minutes. Let it cool slightly.
  3. Prepare the Filling: In a mixing bowl, whisk together the mashed sweet potatoes, brown sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  4. Bake It Up: Pour the sweet potato filling over the cooled crust and bake for 35-40 minutes, or until the filling is set. Let it cool completely before slicing into bars.
  5. Top & Serve: Add whipped cream, marshmallow fluff, or chopped pecans on top for extra deliciousness. Slice into bars and enjoy!

Notes

  • If you prefer a richer flavor, use homemade mashed sweet potatoes.
