Description
Delicious, comforting sweet potato pie bars with a buttery graham cracker crust, spiced filling, and optional toppings like whipped cream, marshmallow fluff, or chopped pecans. A perfect fall dessert!
Ingredients
- For the Crust:
- 1 ½ cups graham cracker crumbs (or crushed vanilla wafers)
- ½ cup melted butter
- ¼ cup brown sugar
- For the Filling:
- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- ½ cup brown sugar
- 2 eggs
- ½ cup evaporated milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp salt
- For the Topping (Optional):
- Whipped cream or marshmallow fluff
- Chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Make the Crust: In a bowl, mix graham cracker crumbs, melted butter, and brown sugar. Press the mixture into the bottom of the pan and bake for 10 minutes. Let it cool slightly.
- Prepare the Filling: In a mixing bowl, whisk together the mashed sweet potatoes, brown sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Bake It Up: Pour the sweet potato filling over the cooled crust and bake for 35-40 minutes, or until the filling is set. Let it cool completely before slicing into bars.
- Top & Serve: Add whipped cream, marshmallow fluff, or chopped pecans on top for extra deliciousness. Slice into bars and enjoy!
Notes
- If you prefer a richer flavor, use homemade mashed sweet potatoes.
- Adjust the sweetness by adding more or less brown sugar, depending on your preference.
- For a nut-free version, skip the chopped pecans and stick with whipped cream or marshmallow fluff for topping.
