Description

Hearty, smoky, and full of flavor, these vegan sweet potato black bean enchiladas are the ultimate comfort food. Rolled in tender corn tortillas and drenched in zesty red enchilada sauce, this dish is a satisfying and nutritious plant-based dinner.


Ingredients

  • 1 large sweet potato (or 2 medium, about 20 ounces total), scrubbed clean
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 2 (15.5 ounce/439 gram) cans black beans, drained and rinsed
  • 2 tablespoons adobo sauce, from a can of chipotle peppers
  • 1 teaspoon salt, or to taste
  • ¼ cup chopped fresh cilantro
  • 2 ½ cups red enchilada sauce, divided
  • 12 corn tortillas, plus a few more, if needed
  • Optional Toppings: Sliced avocado, Chopped fresh cilantro


Instructions

  1. Poke a few holes in the sweet potato with a fork or knife, then microwave for about 8 minutes until very tender. Cut open and let cool slightly, then remove flesh and mash. Discard the peel.
  2. Heat oil in a large skillet over medium heat. Add diced onion and cook for about 4 minutes until softened.
  3. Add minced garlic and ground cumin. Cook for 1 minute, stirring constantly, until fragrant.
  4. Add mashed sweet potato, black beans, and adobo sauce. Stir and cook for 1 to 2 minutes.
  5. Remove from heat, stir in salt and chopped cilantro. Taste and adjust seasonings as needed.
  6. Preheat oven to 400°F (200°C).
  7. Spread 1 ½ cups of enchilada sauce on the bottom of a 9 x 13 inch baking dish.
  8. Warm tortillas in the microwave covered with a damp paper towel for about 20 seconds until pliable.
  9. Place ¼ to ⅓ cup of filling in the center of each tortilla, roll, and place seam-side down in the baking dish. Brush with remaining enchilada sauce.
  10. Repeat until all filling is used. Bake for 20 minutes until sauce is bubbly.
  11. Let enchiladas rest for at least 5 minutes. Top with optional toppings and serve.

Notes

  • Alternatively, you can bake the sweet potatoes in the oven at 400°F for 45 minutes to 1 hour.
  • Smaller baking dishes can be used instead of one large dish.
