Description
This Sweet Chilli Halloumi Wrap is a flavorful and fresh vegetarian meal combining crispy pan-fried halloumi coated in sweet chilli sauce, homemade tzatziki, and crunchy fresh vegetables wrapped in a soft tortilla. Perfect for a quick and satisfying lunch or light dinner, it balances creamy, spicy, and tangy flavors with crisp textures.
Ingredients
Halloumi & Marinade
- 225 g low fat halloumi, thinly sliced
- 1 tbsp sweet chilli sauce
- Red pepper flakes/chilli flakes, to taste
Tzatziki
- 200 ml Greek yogurt
- 1 cucumber, ⅓ grated, ⅔ thinly sliced
- ½ lime, juiced
- Salt, a generous pinch
Wrap Assembly
- 2 heads of baby gem lettuce
- 4 large white wraps
- 1 carrot, grated/sliced into matchstick pieces
- 1 bunch of coriander
- 1 clove garlic, minced
- 1 tbsp rapeseed oil
- Salt & Pepper, to taste
Instructions
- Marinate the Halloumi: Place the thinly sliced halloumi in a bowl and add the sweet chilli sauce along with a pinch of chilli flakes if you prefer some heat. Mix well to ensure each piece is coated evenly. Leave to marinate for at least 15 minutes, or up to 24 hours for deeper flavor infusion.
- Fry the Halloumi: Heat the rapeseed oil in a non-stick frying pan over medium heat. Add the marinated halloumi slices to the pan and cook for about 2 minutes on each side until golden brown and slightly crispy. Add the minced garlic halfway through cooking to infuse the oil and halloumi.
- Prepare the Tzatziki: While the halloumi cooks, combine the Greek yogurt, grated cucumber, lime juice, and a generous pinch of salt in a bowl. Mix thoroughly to create a fresh and tangy tzatziki sauce.
- Assemble the Wrap: Lay out the large white wraps and spread a generous dollop of tzatziki in the center of each. Layer about 3 leaves of baby gem lettuce, sliced cucumber, grated carrot, and then the sweet chilli halloumi slices on top.
- Finish and Serve: Optionally drizzle extra sweet chilli sauce and add a little more tzatziki if desired. Top with fresh coriander leaves, fold up the wraps, and serve immediately while warm and fresh.

- Marinating the halloumi overnight will intensify the sweet chilli flavor.
- Use low-fat halloumi for a lighter version without sacrificing texture.
