Ingredients

  • 16 ounces sugar cookie dough, softened (store-bought dough)
  • 8 ounces cream cheese, softened (one block)
  • ½ cup butter, softened (salted)
  • 2 cups powdered sugar (confectioner’s sugar)
  • 1 teaspoon vanilla
  • 1 pound fresh strawberries, divided
  • 1 cup water
  • ½ cup sugar
  • 3 ounces strawberry gelatin powdered mix (like JELLO)
  • ¼ cup cornstarch

Instructions

  1. Making The Sugar Cookie Crust: Preheat your oven to 350°F (175°C). Line a 10 x 15-inch baking sheet with parchment paper or lightly spray with cooking oil. Rub a teaspoon of oil onto your hands and spread the cookie dough evenly across the pan. Bake for 17-18 minutes or until the edges turn a light golden brown. Let the cookie cool for about 15 minutes.
  2. Making The Cream Cheese Frosting: In a mixing bowl, combine the cream cheese and butter. Use an electric mixer to cream until smooth. Add 1 cup of powdered sugar and vanilla, mixing until smooth. Add the second cup of powdered sugar and mix again until fully combined.
  3. Making The Strawberry Layer: Dice 4 medium strawberries and smash them with a spoon. Set aside. Slice the remaining strawberries into ¼-inch thick slices. In a medium saucepan, combine the gelatin, water, sugar, cornstarch, and smashed strawberries. Cook over medium heat, stirring continuously for about 5 minutes until the glaze thickens. Remove from heat and let cool for 15 minutes.
  4. Assembling The Pizza: Spread the cream cheese frosting evenly over the cooled cookie crust. Gently spread a thin layer of the strawberry glaze over the frosting. Arrange the sliced strawberries in rows on top of the glaze, then spoon any remaining glaze over the strawberries.
  5. Chill the pizza in the fridge for about 20 minutes, until the glaze sets. Slice and enjoy!
