This homemade strawberry cobbler features sweet, juicy strawberries baked under a golden, buttery crumble topping. A simple and comforting dessert that’s ready in just over 30 minutes.
Ingredients
- Sauce Ingredients:
- 1/2 cup white sugar
- 2 tablespoons cornstarch
- 1/4 cup lemon juice
- 3 cups fresh strawberries, hulled and sliced into 1/4-inch slices
- 2 tablespoons cold butter, diced
- Crumble Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon white sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 tablespoons cold butter, cut into cubes
- 1/2 cup heavy cream
Instructions
- Prep Oven & Pan: Preheat oven to 400°F (200°C). Butter a 9-inch round or square baking pan.
- Make Sauce: In a saucepan, combine sugar, cornstarch, and lemon juice. Cook over medium heat until thickened. Remove from heat and gently fold in strawberries.
- Assemble Filling: Transfer strawberry mixture into the prepared baking dish. Dot with diced butter.
- Make Crumble: In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles crumbs. Stir in cream to form a soft dough.
- Top & Bake: Sprinkle crumble mixture evenly over strawberries. Bake for 25 minutes, or until topping is golden brown and filling is bubbly.
- Serve: Let cool slightly before serving warm, optionally with ice cream or whipped cream.
Notes
- Use ripe, fresh strawberries for the best flavor.
- If using frozen strawberries, thaw and drain excess liquid before baking.
- Add a pinch of cinnamon or nutmeg to the crumble for extra flavor.
- Best enjoyed warm but can be stored covered in the refrigerator for up to 3 days.
