Ingredients
- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tablespoon crushed red pepper
- 1 tablespoon Italian seasoning
- 2 tablespoons tomato paste
- 20-ounce can crushed tomatoes
- 15-ounce can tomato sauce
- 1 lb rigatoni pasta, cooked al dente
- ½ cup heavy cream
- Parmesan cheese, optional
Instructions
- Heat the olive oil in a large Dutch oven or stock pot over medium heat.
- Season the chicken breasts with salt and pepper. Add the chicken to the pot and cook for 5-6 minutes until golden brown on one side.
- Flip the chicken and cook for an additional 7-10 minutes until fully cooked through. Transfer the chicken to a platter and keep warm.
- Add the diced onion to the same pot and cook for 3-4 minutes until softened.
- Stir in the garlic, crushed red pepper, and Italian seasoning. Cook for another minute.
- Add the tomato paste and stir to combine with the aromatics.
- Stir in the crushed tomatoes and tomato sauce. Bring the mixture to a boil, then reduce the heat to low and simmer for 5-10 minutes to allow the flavors to meld.
- Add the cooked rigatoni pasta and heavy cream to the sauce. Stir to combine and coat the pasta.
- Cut the cooked chicken into bite-sized pieces and stir it into the pasta.
- Serve immediately, topped with Parmesan cheese, if desired.

- If you prefer a spicier dish, feel free to add more crushed red pepper or a dash of hot sauce.
- For a lighter version, you can substitute the heavy cream with a lighter cream or milk.
