A quick, creamy, and savory rice side dish made with cream of chicken soup, chicken broth, and Parmesan cheese. Perfect for weeknight dinners and easy to customize into a main dish with added protein or vegetables.
Ingredients
- 1 1/2 cups low-sodium chicken broth
- 10.5 oz can condensed cream of chicken soup
- 1 teaspoon chicken bouillon
- 1/8 teaspoon black pepper
- 2 cups instant white rice (Minute Rice brand)
- 1/3 cup grated Parmesan cheese
- 1 teaspoon finely chopped fresh parsley (optional garnish)
Instructions
- In a medium (2 1/2–3 quart) saucepan with a tight-fitting lid, combine chicken broth, cream of chicken soup, chicken bouillon, and black pepper. Bring to a boil over medium-high heat.
- Stir in instant rice and Parmesan cheese.
- Cover tightly and remove from heat. Let sit undisturbed for 5–8 minutes, until rice is tender and most liquid is absorbed.
- Fluff with a fork, transfer to a serving bowl, and garnish with parsley if desired.
Notes
- No extra salt is needed since broth and bouillon provide enough seasoning.
- Use only instant white rice for best results—other types will change texture and cooking time.
- Add cooked chicken, ground beef, turkey, or tuna to make it a main dish. Mix in vegetables for a complete meal.
