Wet Ingredients
- 1 cup soy milk (or use almond, oat or coconut milk)
- 1/2 cup water
- 2 tablespoons canola oil (may omit for oil free)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined, ensuring an even distribution of the leavening and seasoning agents.
- Add Wet Ingredients: Pour the soy milk, water, and canola oil into the dry ingredients bowl. Stir gently with a large spoon until just combined; some lumps are fine. Avoid over mixing to keep the pancakes fluffy.
- Heat the Cooking Surface: Preheat a large griddle or non-stick pan over medium-high heat. Lightly grease the surface with vegan butter or coconut oil to prevent sticking and promote browning.
- Cook the Pancakes: Drop approximately 1/3 cup of batter onto the hot pan. Cook until bubbles start to form on the surface and the edges look set, then carefully flip the pancake and cook for another 1-2 minutes until golden brown on both sides.
- Repeat and Serve: Continue cooking the remaining batter in the same way. Serve warm with vegan butter, pure maple syrup, and fresh fruit if desired.
Notes
- For gluten-free pancakes, substitute the all purpose flour with a gluten-free flour blend suitable for baking.
- You can omit the canola oil for an oil-free version; the pancakes will still be tender but slightly less rich.
