Ingredients
Carrots and Seasonings
- 2 pounds carrots
- 3 Tbsp olive oil
- 2 Tbsp honey (plus more to drizzle)
- 4 large cloves garlic, minced
- 2 tsp dried thyme
- Salt and pepper, to taste
- 1/2 a lemon, juice
- 1 Tbsp fresh parsley, chopped (to garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (205°C) to ensure it’s hot and ready for roasting the carrots.
- Prepare Carrots: Peel the carrots and chop them into roughly 1.5 to 2-inch pieces, cutting on a slight diagonal for even roasting and an attractive presentation.
- Toss with Seasonings: Transfer the carrot pieces to a large baking dish or a lined baking sheet. Add olive oil, honey, minced garlic, dried thyme, salt, and pepper. Toss thoroughly until all carrot pieces are evenly coated with the seasoning mixture.
- Roast Carrots: Place the baking dish or sheet in the oven and roast the carrots for about 30 to 45 minutes. For best results, toss the carrots halfway through roasting to ensure even cooking and caramelization.
- Finish and Serve: Once the carrots have reached desired tenderness, remove them from the oven. Toss the roasted carrots with fresh lemon juice and chopped parsley. Optionally, drizzle with more honey and adjust seasoning with additional salt and pepper. Serve hot and enjoy!
Notes
- Roast time can vary based on carrot size; check tenderness after 30 minutes and roast longer if needed.
- Tossing halfway through roasting ensures even caramelization and flavor distribution.
- Additional honey drizzled on top adds extra sweetness and a glossy finish.
- This recipe pairs wonderfully with roasted meats, grilled dishes, or as a standalone side.
- For a twist, fresh thyme can be substituted for dried thyme.
