Description

This Shrimp Grilled Cheese Gourmet is a deluxe twist on the classic, featuring tender shrimp combined with Gruyere, mozzarella, and Parmesan cheeses on buttery, crispy sourdough. A perfect balance of savory, tangy, and indulgent flavors!


Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, divided
  • 1 large clove garlic, minced
  • 1 tablespoon lemon zest
  • 6 ounces cocktail shrimp, peeled, deveined, and cooked (about 1.25 cups)
  • 1 tablespoon lemon juice
  • ¾ cup grated Gruyere cheese
  • ¾ cup grated mozzarella cheese
  • ¼ teaspoon ground black pepper
  • 4 slices sourdough bread
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Melt 2 tablespoons of butter and the olive oil in a small skillet over medium heat.
  2. Add the minced garlic and cook until aromatic, about 1 minute.
  3. Stir in the lemon zest and cook for an additional minute.
  4. Add the shrimp and heat through. Drizzle with lemon juice and transfer the shrimp mixture to a bowl to cool.
  5. Grate the Gruyere and mozzarella cheeses.
  6. Stir the cheeses into the cooled shrimp mixture along with the ground black pepper.
  7. Spread softened butter on the outside of each slice of sourdough bread.
  8. Sprinkle grated Parmesan cheese on the buttered side and press down lightly to ensure it sticks.
  9. Flip two slices of bread, buttered side down, and top with half of the shrimp and cheese mixture.
  10. Cover with the second slice of bread, butter side up.
  11. Set your air fryer to 400°F on the ROAST or GRILL setting for 5 minutes. Place the sandwiches in the air fryer basket and cook for 3 minutes.
  12. Flip the sandwiches and cook for an additional 2 minutes, or until golden and crispy. Add 1-2 extra minutes if desired.
  13. Alternatively, heat a non-stick skillet over medium heat. Cook the sandwiches until the bottom is crispy and golden. Flip and cook until the second side is golden.
  14. Remove from the air fryer or skillet and serve immediately.

Notes

  • You can substitute shrimp for other seafood like scallops or crab for variation.
  • Adjust the amount of lemon juice and zest based on your preference for tanginess.
  • For an extra crispy crust, add a little more butter to the bread before cooking.
