Description

A quick and easy sheet pan meal featuring sweet potatoes, Brussels sprouts, red onion, and apple chicken sausage, all roasted to perfection and finished with a tangy maple Dijon sauce. This flavorful and healthy American main course is perfect for weeknight dinners, combining savory sausage with sweet and earthy vegetables, complemented by a zesty sauce.

Ingredients

For the Sausage and Veggies:

  • 1 large sweet potato, diced into 1/2-inch cubes
  • 16 oz Brussels sprouts, ends trimmed and sliced
  • 1/2 red onion, sliced
  • 2 tablespoons olive oil, divided
  • 2 teaspoons finely chopped thyme
  • 2 teaspoons finely chopped rosemary
  • 1/2 teaspoon garlic powder
  • Kosher salt, to taste
  • Black pepper, to taste
  • 12 ounces cooked apple chicken sausage, sliced into 1/2-inch thick rounds

For the Maple Dijon Sauce:

  • 2 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 425°F (220°C). Grease a large rimmed baking sheet with a bit of olive oil to prevent sticking and help with roasting.
  2. Combine Sausage and Vegetables: Place the diced sweet potatoes, sliced Brussels sprouts, sliced red onion, and chicken sausage rounds on the prepared baking sheet. Drizzle with remaining olive oil and season evenly with chopped thyme, rosemary, garlic powder, kosher salt, and black pepper. Toss everything together until well coated and distribute in a single, even layer for proper roasting.
  3. Initial Roasting: Put the sheet pan in the preheated oven and roast for 15 minutes. This will start to soften the vegetables and warm the sausage.
  4. Toss and Continue Roasting: Carefully remove the pan and toss the veggies and sausage to ensure even cooking. Return the pan to the oven and roast for an additional 15 minutes or until the vegetables are tender and golden brown.
  5. Prepare Maple Dijon Sauce: While the sausage and veggies roast, whisk together Dijon mustard, pure maple syrup, apple cider vinegar, minced garlic, salt, and pepper in a small bowl until smooth and well combined.
  6. Serve: Once roasted, drizzle the maple Dijon sauce over the sausage and vegetables. Serve immediately while hot for a flavorful and satisfying meal.

Notes

  • How to Store: Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheating: Reheat gently in a skillet over medium heat or in the oven until warmed through. Microwave reheating is possible but may result in mushy vegetables.
  • Meal Prep Tip: This dish is ideal for meal prep. Divide into individual containers for easy lunches during the week.
