Ingredients
- 14 oz chicken or turkey sausage, cut into 1/2-inch slices
- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 2 cups broccoli, cut into 1/2-inch florets
- 1 tablespoon unsalted butter
- 4 medium cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a large sheet pan and add the sausage, sweet potatoes, and broccoli.
- In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the garlic and sauté for 1 minute, or until fragrant.
- Add the honey, soy sauce, and apple cider vinegar to the pan. Bring to a simmer, then reduce the heat to medium-low. Let it simmer for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
- Drizzle the honey garlic sauce over the sausage and vegetables, and season with salt and pepper. Toss everything to coat evenly, then arrange in a single layer on the sheet pan.
- Roast at 400°F (200°C) for 25-30 minutes, or until the vegetables are tender and the sausage is cooked through.
