Ingredients

  • 14 oz chicken or turkey sausage, cut into 1/2-inch slices
  • 2 medium sweet potatoes, cut into 1/2-inch cubes
  • 2 cups broccoli, cut into 1/2-inch florets
  • 1 tablespoon unsalted butter
  • 4 medium cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a large sheet pan and add the sausage, sweet potatoes, and broccoli.
  2. In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the garlic and sauté for 1 minute, or until fragrant.
  3. Add the honey, soy sauce, and apple cider vinegar to the pan. Bring to a simmer, then reduce the heat to medium-low. Let it simmer for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Drizzle the honey garlic sauce over the sausage and vegetables, and season with salt and pepper. Toss everything to coat evenly, then arrange in a single layer on the sheet pan.
  5. Roast at 400°F (200°C) for 25-30 minutes, or until the vegetables are tender and the sausage is cooked through.
