Description

These savory carrot fries are roasted with smoky spices until golden and crisp, then served with a creamy, tangy chipotle yogurt dip. A healthy, flavorful snack or side dish that’s both satisfying and easy to make.

Ingredients

  • For the Carrot Fries:
  • 2 lbs carrots
  • 2 tablespoons avocado oil or olive oil
  • Sea salt and ground black pepper, to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Extra parsley, for sprinkling (optional)
  • For the Chipotle Yogurt Dip:
  • 1 cup plain Greek yogurt or coconut yogurt
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon chipotle pepper flakes (or to taste)
  • 1 teaspoon garlic powder
  • Pinch of sea salt

Instructions

  1. Prep Oven: Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Cut Carrots: Peel carrots and cut into fry-shaped sticks.
  3. Season: Place carrot fries on the baking sheet. Drizzle with oil and sprinkle with garlic powder, smoked paprika, onion powder, cumin, salt, and pepper. Toss to coat evenly and spread in a single layer.
  4. Roast: Bake for 15 minutes, flipping halfway through, until golden brown and tender.
  5. Make Dip: In a small bowl, whisk together yogurt, parsley, lemon juice, chipotle flakes, garlic powder, and salt.
  6. Serve: Sprinkle roasted carrots with extra parsley if desired and serve hot with chipotle yogurt dip.

Notes

  • For crispier fries, avoid overcrowding the pan.
  • Adjust chipotle flakes in the dip depending on your spice preference.
  • Use coconut yogurt for a dairy-free option.
  • Leftover dip can be refrigerated for up to 3 days.
