- 4 oz green chiles, diced, mild

- 2 cups Mexican 3 cheese blend, shredded, divided
Egg Mixture
- 8 large eggs
- 10 oz green enchilada sauce, mild
- 2 tbsp milk or half and half
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Brown the Sausage: In a skillet over medium-high heat, cook the turkey sausage while breaking it up with a spoon until no longer pink. Add the diced green chiles and frozen potatoes O’Brien, cooking until everything is heated through. Remove from heat once done.
- Prepare the Casserole Dish: Lightly grease a 9″x13″ casserole dish with non-stick spray. Set aside while assembling the tortillas.
- Assemble Tortillas: Place about ⅔ cup of the sausage mixture on a flour tortilla, sprinkle with 2 tablespoons of shredded Mexican cheese, and roll up the tortilla, keeping the ends open. Place the rolled tortillas seam-side down in the casserole dish. Repeat until all filling and tortillas are used.
- Add Remaining Filling and Cheese: Sprinkle any leftover sausage mixture and the remaining shredded cheese evenly over the rolled tortillas in the casserole.
- Mix Egg Sauce: In a bowl, whisk together the eggs, green enchilada sauce, milk, salt, and black pepper until the mixture is uniform in color.
- Pour Egg Mixture: Pour the egg and enchilada sauce mixture over the rolled tortillas and cheese in the casserole dish.
- Chill (Optional): Cover the casserole tightly with plastic wrap and refrigerate for up to 24 hours if preparing ahead. If you prefer to bake immediately, proceed to the next step.
- Preheat Oven and Cover: Preheat your oven to 350°F (175°C). Remove any plastic wrap and cover the casserole tightly with aluminum foil.
