Description

These Salted Honey Cookies are soft, chewy, and perfectly balanced with a touch of cinnamon and the sweetness of honey and brown sugar. Finished with a sprinkle of fleur de sel, they offer a delightful blend of sweet and salty flavors that make for an irresistible treat.

Ingredients

Wet Ingredients

  • ½ cup unsalted butter, at room temperature
  • 2 tablespoons oil
  • 1 cup light brown sugar
  • ¼ cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons cinnamon

Topping

  • Fleur de Sel, for sprinkling the tops of cookies

Instructions

  1. Mix Wet Ingredients: In a large bowl or the bowl of a stand mixer, combine the butter, oil, brown sugar, and honey on medium speed using a paddle attachment until the mixture is smooth and consistent throughout, about 1 minute.
  2. Add Egg and Vanilla: Add the egg and vanilla extract, stirring on low to combine. Scrape the sides of the bowl to ensure everything is evenly mixed.
  3. Incorporate Dry Ingredients: Add the flour, baking soda, salt, and cinnamon. Stir on low speed just until combined. Scrape the sides of the bowl and fold in any unincorporated dry ingredients to ensure an even dough.
  4. Chill the Dough: Line a baking sheet with parchment paper. Use a large cookie scoop or spoon to portion out 3 tablespoon-sized rounds of dough onto the sheet. Cover and refrigerate until firm, about 1 ½ hours. This step helps the cookies hold their shape when baking.
  5. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a second baking sheet with parchment paper.
  6. Bake the Cookies: Place just under half of the chilled cookie dough balls spaced evenly on the prepared baking sheet. Bake for about 10 minutes until the edges are set and begin to brown.
  7. Add Salt Topping: Remove cookies from the oven and immediately sprinkle the tops with a pinch of fleur de sel to enhance the flavor contrast.
  8. Cool and Repeat: Allow the cookies to cool slightly on the sheet to set before enjoying. Repeat the baking process with the remaining dough on a new cookie sheet.

Notes

  • Chilling the dough before baking helps cookies maintain a chewy texture and prevents excessive spreading in the oven.
  • Using fleur de sel adds a gourmet salty finish that complements the sweetness of honey and brown sugar.
  • Ensure the butter is at room temperature for easier mixing.
  • Store baked cookies in an airtight container for up to one week.
