Description

Savory, slightly spicy, and balanced with a touch of lemony flavor, these roasted garlic potatoes are crispy on the outside and soft on the inside. An easy and delicious side dish that will be a repeat on your table!


Ingredients

  • For the Potatoes:
  • 2 pounds yellow gold potatoes, cut into wedges
  • 1 large lemon, juiced
  • ⅓ cup olive oil
  • 1¾ cups chicken stock
  • ¼ cup water
  • 2 tsp dried oregano
  • 4 garlic cloves, grated
  • 2 tsp salt
  • Black pepper, to taste
  • Crushed red pepper flakes, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes: Place the potato wedges in a large baking dish.
  3. Make the Sauce: In a measuring cup or bowl, whisk together the lemon juice, olive oil, chicken stock, water, oregano, garlic, salt, black pepper, and crushed red pepper flakes.
  4. Coat the Potatoes: Pour the mixture over the potatoes and toss to coat evenly.
  5. Arrange for Baking: Spread the potatoes in a single layer in the baking dish.
  6. Bake: Bake for 1 hour, or until the potatoes are tender and golden. Stir the potatoes once halfway through baking for even roasting.

Notes

  • For extra crispiness, broil the potatoes for the last 2-3 minutes of baking.
