This Roasted Garlic Hummus recipe transforms classic hummus with the rich, mellow flavor of roasted garlic. Creamy chickpeas are blended with tahini, fresh lemon juice, and a hint of salt, delivering a smooth, flavorful dip perfect for serving with pita bread or fresh vegetables.
Ingredients
Roasted Garlic
- 2 heads garlic
- Extra virgin olive oil (for drizzling and serving)
Hummus Base
- 15 ounce can chickpeas (rinsed and drained)
- 3 tablespoons lemon juice
- 2 tablespoons tahini
- ½ teaspoon salt
- 3 ice cubes
Garnish
- Chopped parsley (for serving)
- Extra virgin olive oil (for drizzling)
- Whole chickpeas (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the garlic cloves.
- Prepare Garlic: Slice about ½ inch off the tops of the garlic heads to expose the tops of the cloves and remove any loose papery outer layers.
- Wrap Garlic: Place the garlic heads cut side up onto a piece of aluminum foil. Drizzle extra virgin olive oil over the exposed cloves, then wrap up the foil securely around the garlic.
- Roast Garlic: Place the foil-wrapped garlic on a baking tray and roast in the preheated oven for 40-45 minutes, or until the garlic is golden brown and soft. Timing may vary depending on the size of the garlic heads.
- Cool and Extract: Remove the garlic from the oven and allow it to cool sufficiently. Once cool, squeeze the soft roasted garlic cloves out from their papery skins into a food processor.
- Blend Hummus: Add the rinsed and drained chickpeas, lemon juice, tahini, salt, and ice cubes into the food processor with the roasted garlic. Blend the mixture for approximately 5 minutes until smooth and creamy. Taste and adjust seasoning, adding more lemon juice or salt if desired.
- Serve: Spoon the hummus onto a serving plate or bowl, spreading it with the back of a spoon to create decorative swirls. Drizzle extra virgin olive oil on top, add a few whole chickpeas for garnish, and sprinkle with chopped parsley. Serve with warm pita bread or fresh vegetables.
