Indulge in this decadent dessert featuring a deeply chocolatey brownie layer, a melty caramel topping, and a buttery, crisp crust. Perfect for chocolate and caramel lovers, this Rich and Gooey Caramel Brownie Pie is a sweet treat for any occasion, sure to satisfy your cravings for something indulgent.

Ingredients

  • 1 ½ cups graham cracker crumbs or crushed pretzels
  • ¼ cup sugar
  • ½ cup melted butter
  • ½ cup melted butter
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup chocolate chips (optional)
  • 1 cup thick caramel sauce (homemade or store-bought)
  • Optional toppings: flaky sea salt, chopped pecans, dark chocolate drizzle

Instructions

  1. Prepare the Crust: Mix your choice of graham cracker crumbs or crushed pretzels with sugar and melted butter. Press the mixture into a 9-inch pie dish. Bake at 350°F (175°C) for 8–10 minutes, then allow it to cool slightly.
  2. Make the Brownie Layer: In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Stir in cocoa powder, flour, baking powder, and salt until smooth. If using, fold in chocolate chips.
  3. Pour the brownie batter into the cooled crust.
  4. Bake the pie for 25–30 minutes at 350°F (175°C). The edges should be set, but the center should remain slightly soft. When testing with a toothpick, a few moist crumbs should stick.
  5. Add the Caramel: Allow the pie to cool for 15–20 minutes. Spread the caramel sauce evenly over the top of the brownie layer. Optionally, sprinkle flaky sea salt or chopped pecans on top. Let the pie set completely before slicing.
  6. Slice and Serve: Serve the pie warm with a scoop of vanilla ice cream, or enjoy it chilled for a firmer texture.

Notes

  • If you prefer a thicker caramel layer, add more caramel sauce as desired.
  • The pie can be served warm for a gooey texture or chilled for a firmer consistency.
  • For added richness, drizzle some dark chocolate over the caramel layer before serving.
