With all of the traditional flavors of the sandwich, this Reuben Dip is creamy and savory and everything you love about a Reuben. It’s a delicious hot dip that is perfect for any party, game day, or just to enjoy at home on a relaxing weekend!
Ingredients
- 8 ounces cream cheese, softened
- 6 ounces deli corned beef, chopped
- 1 cup Swiss cheese, shredded
- ⅔ cup sauerkraut, drained
- ½ cup sour cream
- ¼ cup Thousand Island dressing
- Rye chips (for serving)
- Sturdy crackers/chips (for serving)
- Veggies like carrots, celery (for serving)
Instructions
- Preheat the oven to 400°F (200°C). Coat an 8×8 pan with cooking spray. Set aside.
- In a large bowl, mix together cream cheese, sour cream, and Thousand Island dressing until smooth.
- Add corned beef, sauerkraut, and shredded Swiss cheese. Mix until well combined.
- Evenly spread the mixture into the prepared pan.
- Bake for 25-30 minutes, or until the dip is hot and bubbly.
- Cool slightly before serving with rye chips, sturdy crackers, or fresh veggies.
Notes
- For a lighter version, you can use reduced-fat cream cheese and sour cream.
- If you prefer a spicier dip, add a pinch of cayenne pepper or some hot sauce.
- For extra flavor, you can top the dip with additional shredded Swiss cheese before baking.
