Description

With all of the traditional flavors of the sandwich, this Reuben Dip is creamy and savory and everything you love about a Reuben. It’s a delicious hot dip that is perfect for any party, game day, or just to enjoy at home on a relaxing weekend!


Ingredients

  • 8 ounces cream cheese, softened
  • 6 ounces deli corned beef, chopped
  • 1 cup Swiss cheese, shredded
  • ⅔ cup sauerkraut, drained
  • ½ cup sour cream
  • ¼ cup Thousand Island dressing
  • Rye chips (for serving)
  • Sturdy crackers/chips (for serving)
  • Veggies like carrots, celery (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C). Coat an 8×8 pan with cooking spray. Set aside.
  2. In a large bowl, mix together cream cheese, sour cream, and Thousand Island dressing until smooth.
  3. Add corned beef, sauerkraut, and shredded Swiss cheese. Mix until well combined.
  4. Evenly spread the mixture into the prepared pan.
  5. Bake for 25-30 minutes, or until the dip is hot and bubbly.
  6. Cool slightly before serving with rye chips, sturdy crackers, or fresh veggies.

Notes

  • For a lighter version, you can use reduced-fat cream cheese and sour cream.
