Description

This quick and easy chicken recipe is perfect for busy nights, delivering juicy, flavorful chicken thighs in just 15 minutes using a simple spice blend and your choice of grilling or broiling.


Ingredients

  • 2 tsp garlic powder
  • 1 ½ tsp onion powder
  • 2 tsp paprika (or smoked paprika)
  • 2 tsp dried oregano
  • 1 ½ tsp black pepper
  • 1 tsp salt
  • 3 lbs boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 2 tbsp fresh cilantro, chopped (optional)

Instructions

  1. Combine the garlic powder, onion powder, paprika, oregano, black pepper, and salt in a small bowl.
  2. Sprinkle half of the spice mixture evenly over the chicken thighs. Flip the chicken and sprinkle the remaining spices on the other side. Rub the spices into the chicken to ensure an even coating.
  3. For Grill Pan: Heat a nonstick grill pan over medium heat and drizzle with olive oil. Add half of the chicken thighs to the pan, leaving space between each piece. Cook the chicken for 5 minutes without moving it. Flip the chicken and cook for another 3 to 5 minutes, or until fully cooked. Repeat with the remaining chicken.
  4. For Broiling: Preheat your oven to broil and set the oven rack about 6 inches from the top. Place a wire rack over a large baking tray and arrange the chicken on the rack. Broil for 6 minutes, flip the chicken, and broil for another 5 to 6 minutes, or until cooked through.
  5. Let the chicken rest for 5 minutes before serving. Garnish with fresh cilantro, if desired.

Notes

  • For extra smoky flavor, try using smoked paprika in the spice blend.
  • Make sure the chicken is fully cooked before serving—an internal temperature of 165°F (74°C) is recommended.
  • This recipe works with chicken breasts or drumsticks as well if you prefer, but cooking times may vary.
  • Fresh cilantro is optional but adds a nice freshness and flavor to the dish.
