These no-bake Pumpkin Energy Bites are a quick and wholesome snack made with creamy peanut butter, pumpkin puree, oats, seeds, and spices. Packed with fiber, protein, and fall flavors, they’re perfect for a healthy boost any time of day.
Ingredients
- 1/2 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup unsalted creamy peanut butter
- 4 tablespoons maple syrup
- 1/2 teaspoon pumpkin pie spice
- 1 1/4 cups rolled oats
- 1/4 cup ground flax meal
- 1/2 cup unsalted pumpkin seeds
- 1/2 cup raisins
- 1/4 cup whole flax seeds
Instructions
- In a large bowl, combine the pumpkin puree, peanut butter, maple syrup, and pumpkin pie spice until smooth.
- Stir in rolled oats, ground flax meal, pumpkin seeds, raisins, and whole flax seeds. Mix well until fully incorporated.
- Refrigerate the mixture for 15–20 minutes to firm up.
- Roll into 1-inch balls and place on a parchment-lined baking sheet.
- Refrigerate for another 15 minutes before serving.
- Store in an airtight container in the refrigerator for up to 1 week.

- Use a cookie scoop for evenly sized bites.
- You can substitute peanut butter with almond or sunflower seed butter for allergies.
