Description

This Protein Banana Bread is a healthy, delicious treat packed with protein, making it the perfect breakfast or snack. With 10 grams of protein per slice, it’s filling, nutritious, and easy to make!


Ingredients

  • 1 1/2 cups white, spelt, or oat flour (or almond flour for a gluten-free option)
  • 1/2 cup protein powder (60g)
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 1/2 cups mashed overripe banana
  • 1/2 cup yogurt (or additional banana for a dairy-free option)
  • 1/2 cup pure maple syrup, honey, or agave
  • 1/3 cup oil or water
  • 2 tsp pure vanilla extract
  • Optional: chocolate chips, walnuts, coconut, etc.

Instructions

  1. Grease a 9×5 loaf pan and line the bottom with parchment paper. Preheat the oven to 350°F (175°C).
  2. In a large bowl, stir all ingredients together until fully combined. Smooth the batter into the prepared loaf pan.
  3. Bake for 40 minutes. After 40 minutes, turn off the oven but do not open the door. Leave the banana bread in the oven for an additional 5 minutes.
  4. If the bread is still soft in the center, cover the top with tin foil and continue baking until a toothpick inserted into the center comes out mostly clean.
  5. Let the bread cool, then use a knife to go around the edges before inverting it onto a plate.
  6. For the best flavor and texture, let the bread sit overnight.
