Ingredients

Vegetables and Meat

  • 1 Tbsp olive oil
  • 1 medium yellow onion, sliced
  • 2 medium green bell peppers, sliced
  • 1/2 lb – 3/4 lb deli roast beef, sliced into small pieces

Pasta

  • 10 oz shell pasta

Cheese Sauce

  • 2 eggs
  • 1 cup evaporated milk
  • 1 cup provolone, grated or thinly sliced
  • 2 cups mild cheddar cheese, grated
  • 1/2 tsp seasoned salt


Instructions

  1. Boil Pasta: Put a large pot of water onto boil for the pasta. Once boiling, add the shell pasta and cook until al dente according to package directions. Reserve 1 cup of pasta water before draining.
  2. Sauté Vegetables: Meanwhile, heat olive oil in a large skillet over medium heat. Add sliced onions and green bell peppers, sautéing until the onions are translucent and soft with no crunch remaining, about 10 minutes.
  3. Cook Roast Beef: Add the sliced roast beef to the skillet with the vegetables and cook until heated through. Remove from heat and set aside.
  4. Prepare Cheese Sauce: In a large Dutch Oven or saucepan, whisk together eggs, evaporated milk, seasoned salt, provolone, and cheddar cheese over medium heat. Continue whisking until the cheese is fully melted and the sauce thickens.
  5. Combine Pasta and Sauce: Add the cooked pasta to the cheese sauce mixture. Slowly add reserved pasta water a few tablespoons at a time to reach the desired creamy consistency. Discard any remaining pasta water.
  6. Add Meat and Vegetables: Stir in the sautéed onions, peppers, and roast beef, ensuring everything is evenly coated with the cheese sauce.
  7. Serve: Serve the Philly Cheesesteak Mac and Cheese immediately for the best texture and flavor.
