Ingredients
- 2 cups all-purpose flour
- 2/3 cups pecans or walnuts, finely chopped
- 1/2 teaspoon sea salt
- 1 cup unsalted butter, softened
- 2 teaspoons vanilla extract
- 1/2 cup powdered sugar (plus extra for dusting)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, chopped pecans, and sea salt.
- In a separate bowl, beat the softened butter, vanilla extract, and powdered sugar using a hand or stand mixer until smooth and creamy.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined to form a dough.
- Using a small scoop or spoon, portion out 1-inch balls of dough. Roll them between your palms to form round balls and place on the prepared baking sheet, spaced slightly apart.
- Bake for 8–10 minutes, or until the bottoms are lightly golden. Do not overbake.
- Let cookies cool slightly, then roll in additional powdered sugar until fully coated. Let cool completely on a wire rack.

- Do not overbake—snowball cookies should remain pale on top and only lightly browned on the bottom.
