Description

Soft, chewy no-bake bars packed with peanut butter flavor, made with marshmallows and Rice Krispies cereal for a quick, crowd-pleasing treat.


Ingredients

  • 4 tablespoons unsalted butter
  • 10 oz mini marshmallows
  • 1/2 cup creamy peanut butter (not natural peanut butter)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine sea salt
  • 6 cups Rice Krispies cereal
  • 2 cups mini marshmallows (optional, for extra mix-in)

Instructions

  1. Grease a 9-inch square baking dish with butter or non-stick spray.
  2. In a large pot over medium heat, melt butter and 10 oz marshmallows, stirring until smooth.
  3. Stir in peanut butter, vanilla, and salt until fully combined.
  4. Remove from heat. Fold in Rice Krispies until coated.
  5. Gently fold in optional 2 cups mini marshmallows.
  6. Transfer to prepared dish and lightly press mixture into an even layer without compacting too much.
  7. Let cool at room temperature for about 1 hour. Slice into squares.

Notes

  • Do not over-press the mixture or the bars may become too dense.
  • Natural peanut butter is not recommended as it can cause separation and texture issues.
  • Extra mini marshmallows make the bars softer and chewier.
