Description

These Peanut Butter Chocolate Chip Cookie Bars are thick, chewy, and packed with the perfect balance of peanut butter and chocolate flavor. Easy to make and irresistibly delicious, they’re a great treat for any occasion!


Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • ½ cup unsalted butter, softened
  • ½ cup creamy peanut butter
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups peanut butter chips
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper and set aside.
  2. In a large bowl, stir together the flour, baking powder, and salt. Set aside.
  3. In the bowl of a stand mixer (with paddle attachment) or in a large bowl with an electric hand mixer, cream the butter with the peanut butter until smooth.
  4. Add the granulated sugar and brown sugar to the mixture, stirring until fully combined. Add the eggs one at a time, ensuring each is well mixed before adding the next. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  6. Stir in the peanut butter chips and chocolate chips until evenly incorporated.
  7. Press the cookie dough into the prepared baking pan, spreading it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool completely before lifting them out of the pan using the parchment paper. Cut into squares and serve.

Notes

  • For an extra peanut butter flavor, drizzle some melted peanut butter on top of the bars after baking.
  • You can substitute the semi-sweet chocolate chips with milk chocolate or dark chocolate for a different twist.
