These Peanut Butter Chocolate Chip Cookie Bars are thick, chewy, and packed with the perfect balance of peanut butter and chocolate flavor. Easy to make and irresistibly delicious, they’re a great treat for any occasion!
Ingredients
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon fine sea salt
- ½ cup unsalted butter, softened
- ½ cup creamy peanut butter
- ¾ cup granulated sugar
- ¾ cup light brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups peanut butter chips
- 1 ½ cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper and set aside.
- In a large bowl, stir together the flour, baking powder, and salt. Set aside.
- In the bowl of a stand mixer (with paddle attachment) or in a large bowl with an electric hand mixer, cream the butter with the peanut butter until smooth.
- Add the granulated sugar and brown sugar to the mixture, stirring until fully combined. Add the eggs one at a time, ensuring each is well mixed before adding the next. Stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, stirring until just combined.
- Stir in the peanut butter chips and chocolate chips until evenly incorporated.
- Press the cookie dough into the prepared baking pan, spreading it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely before lifting them out of the pan using the parchment paper. Cut into squares and serve.
Notes
- For an extra peanut butter flavor, drizzle some melted peanut butter on top of the bars after baking.
- You can substitute the semi-sweet chocolate chips with milk chocolate or dark chocolate for a different twist.
