Ingredients
- 1 cup milk
- 1 cup granulated sugar
- 1 cup peanut butter
- 2 eggs, room temperature
- 1 ½ cups flour

- ½ teaspoon salt
Instructions
- Prepare the Oven and Pan:
- Move the oven rack to the center and preheat the oven to 350°F (175°C).
- Lightly spray an 8×4 loaf pan with nonstick spray, then line with a piece of parchment paper.
- Make the Batter:
- In a heavy-duty blender or food processor, add the milk, sugar, peanut butter, and eggs.
- Process for 1 to 2 minutes until smooth, depending on your appliance’s strength.
- Add in the flour, oats, baking powder, and salt. Process again until smooth, about 1 minute. (For lower wattage appliances, gradually add the dry ingredients.)
- Bake the Bread:
- Pour the batter into the prepared loaf pan.
- Bake for 1 hour and 10 minutes, or until a toothpick comes out clean or with just a few crumbs.
- Cool and Serve:
- Remove the bread from the oven and let it rest in the pan on a cooling rack for 10 minutes.
- Carefully remove the bread from the pan and allow it to cool completely before slicing.
