Description

A moist, sweet, and comforting bread infused with rich peanut butter, perfect for any time of day. Enjoy it with your favorite toppings like peanut butter, jelly, or sliced bananas!

Ingredients

  • 1 cup milk
  • 1 cup granulated sugar
  • 1 cup peanut butter
  • 2 eggs, room temperature
  • 1 ½ cups flour
  • ½ cup old-fashioned oats
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Instructions

  1. Prepare the Oven and Pan:
    1. Move the oven rack to the center and preheat the oven to 350°F (175°C).
    2. Lightly spray an 8×4 loaf pan with nonstick spray, then line with a piece of parchment paper.
  2. Make the Batter:
    1. In a heavy-duty blender or food processor, add the milk, sugar, peanut butter, and eggs.
    2. Process for 1 to 2 minutes until smooth, depending on your appliance’s strength.
    3. Add in the flour, oats, baking powder, and salt. Process again until smooth, about 1 minute. (For lower wattage appliances, gradually add the dry ingredients.)
  3. Bake the Bread:
    1. Pour the batter into the prepared loaf pan.
    2. Bake for 1 hour and 10 minutes, or until a toothpick comes out clean or with just a few crumbs.
  4. Cool and Serve:
    1. Remove the bread from the oven and let it rest in the pan on a cooling rack for 10 minutes.
    2. Carefully remove the bread from the pan and allow it to cool completely before slicing.
  5. Optional Toppings:
    1. Top with peanut butter, jelly, sliced bananas, or any of your favorite spreads.

Notes

  • If you have a lower-wattage appliance, it might help to add the dry ingredients gradually to avoid overloading the motor.
  • This bread is versatile; try adding chocolate chips, nuts, or dried fruit to the batter for extra flavor.
  • Store the bread in an airtight container at room temperature for up to 4 days or refrigerate for longer shelf life.
